Can you steep cold brew directly in milk?

You can technically steep ground coffee directly in cold milk. For home use, however, the more cautious answer is to make classic cold brew with water and add milk when serving. This gives you more control over flavour, filtration and, above all, food safety.

Milk is perishable. Leaving it with coffee grounds for several hours, even for a cold drink, is not the same as a simple water infusion. If you still want to try it, do so only in the refrigerator, in a clean container, with pasteurised milk, and consume it promptly.

The short answer #

For a reliable cold milky coffee:

  1. Steep coffee in cold water, ideally for 12 to 16 hours in the refrigerator.
  2. Filter it carefully.
  3. Add cold milk, oat drink or another plant-based drink just before drinking.
  4. Keep the mixture refrigerated and do not leave it waiting on the worktop.

This approach follows the basic idea of cold brew more closely and avoids turning a simple recipe into a fragile experiment. It works very well when you want a smooth, creamy and refreshing drink.

Why milk makes steeping more complicated #

Water extracts soluble coffee compounds without adding fat, protein or lactose. Milk brings an appealing texture and sweetness, but also several constraints:

  • it filters less easily than a water infusion;
  • more fine coffee particles may remain in the mixture;
  • it can mask delicate fruity or floral notes;
  • it is less straightforward to store than black cold brew;
  • it must remain at a safe temperature throughout preparation.

The food safety issue #

The main precaution concerns temperature and the absence of cooking. The Swiss Federal Food Safety and Veterinary Office guidance (German) recommends keeping perishables and leftovers refrigerated and promptly returning chilled products to the refrigerator. For this milk recipe, ideally set the refrigerator at 4°C or below. The FDA uses that threshold and a two-hour maximum outside refrigeration for foods that need chilling, reduced to one hour above about 32°C.

Ground coffee is not sterile and cold extraction provides no thermal kill step. In a challenge study published in 2025, Salmonella, E. coli O157:H7 and Listeria monocytogenes survived for several days in deliberately inoculated water-based cold brew. The study did not test milk and cannot establish a safe period for this recipe, but it confirms that refrigeration does not disinfect a contaminated mixture (Journal of Food Safety, 2025).

In practice, this means:

  • do not steep coffee in milk at room temperature overnight;
  • do not leave the bottle on the worktop;
  • do not taste it when smell, appearance or texture seems abnormal;
  • do not prepare a week’s supply with milk already mixed in.

Even in the refrigerator, coffee steeped directly in milk should be consumed promptly. Do not treat it like black cold brew concentrate that can be kept for several days.

A more cautious method if you want to test it #

If you are determined to steep directly in milk, keep the trial small and controlled:

  1. Clean the jar, filter and spoon.
  2. Use very cold pasteurised milk.
  3. Add 20 to 25 g of coarsely ground coffee to 250 ml of milk.
  4. Close the jar and put it in the refrigerator immediately.
  5. Steep for 4 to 6 hours, not all day.
  6. Filter carefully and consume it the same day.

This 4 to 6-hour window is a deliberately short home trial, not a validated storage period. Do not keep leftovers. Anyone who is pregnant, older, immunocompromised or particularly vulnerable to foodborne infection should use the water method and add pasteurised milk when serving.

This recipe produces a drink that is more gentle than intense. It works better with a medium or slightly darker roast carrying chocolate, hazelnut or caramel notes. A very floral or sharply acidic coffee often loses definition in milk.

The best alternative: cold brew, then milk #

The simplest solution is to separate the two stages.

First make a concentrate:

  • 60 g of coarsely ground coffee;
  • 500 ml of cold water;
  • 12 to 16 hours in the refrigerator;
  • filtration with paper, a clean cloth or a French press filter.

Then serve:

  • 1 part cold brew;
  • 1 part cold milk or plant-based drink;
  • a few ice cubes if drinking immediately.

How does milk change the flavour? #

Milk reduces the perception of bitterness and acidity. This may help with slightly rough coffee, but it can also hide some character. Available cold brew research mainly compares hot- and cold-water extraction rather than steeping in milk. One Scientific Reports study, for example, found comparable pH values in hot and cold brews but higher titratable acidity in the tested hot samples (Rao and Fuller, 2018). Another study found caffeine and some chlorogenic acids approaching extraction equilibrium after roughly 6 to 7 hours in the cold brew samples tested (Lane et al., 2017).

Avoid broad promises such as “cold brew is always low-acid” or “milk extracts aromas better”. What you perceive depends on the coffee, roast, ratio, steeping time and amount of milk.

Which coffee suits a cold milk drink? #

Prefer:

  • a medium to medium-dark roast;
  • chocolate, praline, caramel or biscuit notes;
  • a coarse grind that is easier to filter;
  • fresh, well-stored coffee that need not be extremely light or floral.

Mistakes to avoid #

  • Steeping in milk outside the refrigerator.
  • Using a fine grind that creates a sandy texture.
  • Keeping coffee and milk together for several days.
  • Believing smell alone guarantees safety.
  • Adding a great deal of sugar to hide a flat taste.
  • Using a very expensive, subtle coffee in a recipe that will cover it.

Verdict #

Steeping coffee directly in cold milk is possible, but it is not the most advisable everyday method. For a safe, consistent and easy cup, make cold brew with water, filter it and add milk when serving.

Reserve direct milk steeping for a small one-off test in the refrigerator, with strict hygiene and no storage of leftovers. You may get a smooth, indulgent drink, but not necessarily one that is better than well-measured classic cold brew.
