Build a coffee cocktail around the coffee base first, then balance bitterness, sweetness, acidity, alcohol, ice and texture. Espresso suits a foamy short drink, cold brew a refreshing highball and strong filter coffee a warm or longer serve. Decaf is often the best base late in the evening.
Caffeine does not neutralise alcohol. The CDC warns that feeling more alert can encourage more drinking while impairment remains. Measure each ingredient, keep portions modest, serve water and offer an appealing alcohol-free option.

Use a repeatable cold-brew recipe or a clean home espresso before reaching for extra syrup.
1. Maple espresso martini #
- 40 ml vodka
- 20 ml coffee liqueur
- 30 ml espresso
- 5 to 10 ml maple syrup
- ice
Cool the espresso briefly, shake everything hard with ice for 10 to 15 seconds and strain into a chilled glass. Coffee liqueur already adds sugar, so begin with the smaller syrup dose. The core formula follows the International Bartenders Association.
2. Rosemary cold-brew tonic #
- 60 ml cold-brew concentrate
- 100 to 120 ml tonic
- 10 ml simple or rosemary syrup
- rosemary sprig, lemon and ice
Fill a tall glass with ice, add tonic and syrup, then float the cold brew. Stir once. Add 20 ml dry gin for an alcoholic variation, or leave the base alcohol-free. A very dry tonic and dark roast can combine into excessive bitterness.
3. Coffee mojito #
- 40 ml white rum
- 70 ml cold brew
- 10 ml cane syrup
- half a lime
- 6 to 8 mint leaves
- sparkling water and ice
Press lime and mint gently with the syrup, add rum, coffee and ice, then top with sparkling water. Do not shred the mint. For an alcohol-free glass, omit rum, use 90 ml cold brew and add more sparkling water.
4. Restrained Irish coffee #
- 40 ml Irish whiskey
- 100 to 120 ml strong hot coffee
- 1 to 2 tsp brown sugar
- 30 ml lightly whipped cold cream
Warm the glass, dissolve sugar in whiskey and coffee, then float cream over the back of a spoon. Drink through the cream rather than using a straw. Use decaf for a late dinner because caffeine can disturb sleep long after the meal.
5. Light coffee colada #
- 40 ml aged rum
- 60 ml pineapple juice
- 40 ml concentrated cold coffee
- 20 ml coconut milk
- 5 ml lime juice
- ice
Shake for 10 seconds and strain over fresh ice. The small lime dose prevents pineapple and coconut from becoming cloying; it should not dominate. Chocolate-led coffee generally integrates more easily than a delicate floral roast.
6. Affogato cocktail #
Place one scoop of vanilla ice cream in a small chilled bowl, add 10 ml amaretto, dark rum or coffee liqueur, then pour one hot espresso over it. Serve immediately. This is a dessert portion, not a full mixed drink. See our coffee dessert recipes for the alcohol-free form and other options.
Prepare a party without overcomplicating it #
Make cold brew and clean syrup in advance and refrigerate them. Prepare espresso near service, keep cream cold and provide abundant ice. Coffee, dairy, opened juice and homemade syrup need clean containers and appropriate refrigeration. Do not leave milk- or cream-based drinks standing on a warm table.
Choose two recipes rather than six for one event: perhaps a shaken short drink and a long alcohol-free tonic. Name caffeine, alcohol, dairy and nuts on a small menu. Never market the drinks as energy for drinking longer, and plan transport as you would for any alcoholic service.
Alcohol-free variations with structure #
- Cold brew, tonic, lime and light syrup.
- Cooled espresso, orange juice, sparkling water and ice.
- Cold coffee, plant drink, cinnamon and vanilla.
- Hot decaf, dark syrup, cold cream and nutmeg.
An alcohol-free drink still benefits from bitterness, acidity and texture; it need not be coffee with excess sugar. The best coffee cocktail is measured, recognisably coffee-led and transparent about what it contains.
