The journey of a coffee bean does not begin as a brown bean. It begins as a coffee cherry, a tropical fruit that usually contains two seeds. Those seeds are harvested, separated from the fruit, dried, sorted, transported, roasted, ground and extracted with water. Every decision can make the cup cleaner, fruitier, rounder, more bitter or flatter.
Flavour therefore depends on more than the country of origin. Species, variety, ripeness, processing, drying, storage, roasting, grind, water and brewing method interact. A coffee from Ethiopia, Brazil or Colombia may be excellent or ordinary depending on the work between tree and cup.

The coffee tree and its fruit #
Coffee grows mainly across the tropical belt, where temperature, rainfall, elevation and soil suit coffee trees. So-called beans are the seeds of the fruit, as the National Coffee Association explains. This distinction shows why harvesting and processing matter: the first material handled is a ripe, sugary and perishable fruit.
Two species shape most of the market:
- arabica, often valued for aromatic diversity and more perceptible acidity;
- robusta, generally higher in caffeine at the same weight and often more forceful.
Species cannot tell the whole story. Variety, location, ripeness, process and roast may preserve or hide the initial potential.
1. Cultivation: potential begins on the farm #
Producers choose varieties, maintain trees and manage shade, plant diseases, water and soil fertility. These decisions affect yield, resilience and possible cup character.
Elevation is a clue, not a quality seal. Under suitable conditions, higher-grown arabica may ripen more slowly and develop complexity. Poor processing or an unsuitable roast can lose that advantage. Conversely, an unremarkable coffee on paper may taste very good when it is picked ripe, sorted cleanly and roasted well.

2. Harvest: choosing ripe cherries #
Cherries on one tree do not necessarily ripen together. Selective hand-picking allows workers to return several times and choose ripe fruit. Mechanised harvesting is also used, especially on large and relatively flat farms. Careful sorting is then needed to limit unripe, overripe or damaged cherries.
Unripe fruit may contribute vegetal or astringent impressions. Overripe or damaged cherries increase the risk of unwanted notes. The NCA’s coffee lifecycle outlines the principal harvest and processing routes.
3. Processing: washed, natural and honey #
After harvest, the seeds need to be prepared for drying and roasting. The National Coffee Association describes three broad families:

Natural does not automatically mean more authentic or better, and washed does not mean flat. A process name suggests a direction. Care, hygiene, drying and every later step determine whether it succeeds.

4. Drying, resting and hulling #
Seeds or whole cherries dry on patios, raised beds, in mechanical dryers or through combined systems. The aim is stable green coffee without excessively rapid drying or conditions that encourage moisture damage and mould.
Lots need to be turned, protected from rain and checked for defects. After a possible resting period, hulling removes dry outer layers. Coffee can then be sorted by size, density, colour and defects. It is now green coffee ready for trade and transport.
5. Transport and storage #
Green coffee may travel for a long time before reaching a Swiss roaster. It needs protection from moisture, strong odours, high heat and large environmental changes. Roasting cannot completely repair weakened raw material.
For a buyer, concrete information is more useful than a vague “grand cru”: origin, process, responsible roaster and a roast date when supplied. Once roasted, coffee becomes even more sensitive to air, moisture, heat and light. The NCA’s storage guidance recommends an airtight, opaque container in a cool, dry place.
6. Roasting: heat shapes aroma #
Green coffee does not yet smell like the finished cup. Roasting changes sugars, acids, aroma precursors and cell structure. A highly developed roast can hide origin nuance; an unsuitable profile may make the cup unbalanced.
- Light: often more perceptible acidity, flowers or fruit, and frequently demands precise extraction;
- medium: an approachable compromise for many filter, French press and espresso recipes;
- dark: generally more roast flavour, body and bitterness, with less readable origin character.

7. Grinding: potential becomes a home recipe #
Smaller particles expose more surface to water and may dissolve compounds faster. In percolation methods, they also increase resistance in the coffee bed and can slow the flow dramatically. In immersion, water remains with the particles, so the mechanism differs.

8. Brewing: water reveals the earlier work #
The final step cannot repair all previous mistakes. Extraction depends on dose, grind, water temperature, contact time, water composition and evenness.
In practice:
- weigh coffee initially so the recipe can be repeated;
- check grind before immediately replacing the beans;
- begin with the method or manufacturer’s temperature recommendation;
- rinse a paper filter when its manufacturer or recipe recommends it;
- keep the machine, portafilter, grinder and carafe clean;
- change one variable at a time and record the result.
The same lot may seem floral as filter, concentrated as espresso, more textured in French press and gentler when extracted cold. Coffee’s versatility also limits claims about one fixed “origin taste”.
Reading a bag after understanding the whole journey #
Useful information includes:
- specific origin, preferably a region or farm;
- species and variety when known;
- washed, natural, honey or another process;
- roast date if supplied, best-before date, pack condition and suitable size;
- roast level or recommended method;
- plausible sensory notes;
- dose or grind guidance.
An everyday coffee does not need to be rare or expensive. A traceable coffee that suits the equipment and is extracted consistently may be more enjoyable than a prestigious lot prepared poorly.

The journey from cherry to cup is a chain of decisions. Cultivation creates potential. Harvest and processing preserve or reduce it. Drying and storage stabilise green coffee. Roasting shapes it, while grinding and water turn it into a drink.
