Why coffee grind size matters for a balanced cup

Grind size is often the adjustment that changes coffee flavour most quickly. In a percolation method, an excessively fine grind can slow the water, encourage uneven flow and produce bitterness or dryness. A grind that is too coarse often lets the water pass too quickly. In immersion brewing, where water remains in contact with the coffee, the effect on flow disappears, but surface area and contact time still alter extraction.

The basic starting rule is simple: the shorter or more pressurised the extraction, the finer the grind usually needs to be. The longer the contact with water, the coarser it usually needs to be. These guidelines are not absolute physical laws. The coffee, roast, grinder, filter, dose and water all affect the outcome. They simply provide a dependable place to start.

Why grind size changes extraction so much #

Grinding coffee increases the surface exposed to water. The smaller the particles, the more quickly water can dissolve aromatic compounds, acids, sugars, bitter compounds and material that contributes body. This is useful for espresso, where contact is very short. It can be troublesome during a long immersion, where an excessively fine grind extracts quickly and leaves more particles in the cup.

The Specialty Coffee Association publishes separate standards for home brewers, home grinders and semi-automatic or automatic espresso machines. This structure is a reminder that particle distribution and brewing equipment need to be considered together. In practice, never judge grind size in isolation. A cup that is too strong may result from too much coffee. A very lively cup may also reflect the beans or water temperature. A bitter cup may come from a very dark roast, uneven flow or excessive extraction.

To avoid a false diagnosis, keep the same dose, water and time, then alter only the grind for the next attempt.

The most useful diagnosis: sharp, bitter or watery? #

If the coffee is sharply acidic, thin or runs too quickly, under-extraction is possible. Try grinding a little finer, extending contact time slightly or checking water temperature. If it is bitter, dry, heavy or very slow, excessive extraction or a partly clogged bed is possible. Try a coarser setting and check whether fine particles are restricting the filter. These symptoms guide the diagnosis; they never prove a single cause.

If the coffee is simply weak without tasting particularly sharp, check the dose as well. Perfect grind size cannot compensate for an excessively diluted recipe. Measure both coffee and water so that the next comparison is meaningful.

The classic mistake is to change everything at once: more coffee, finer grind, hotter water and longer contact. The next cup might improve, but you will not know why. One change at a time produces much more repeatable progress.

Espresso: the most sensitive adjustment #

Espresso needs a fine, even grind because water crosses a compact puck in a short time. A small movement of the grinder can alter flow, texture and balance. If the shot runs very fast and looks pale, go finer. If almost nothing comes out, or the flow becomes a slow drip with a dry finish, go coarser.

Exact numbers depend on the machine and coffee. Dose, distribution in the basket and preferential channels through the puck can also change flow, so do not automatically correct every problem with the grinder. Moka pot: do not copy espresso #

A moka pot generally uses a medium-fine grind, often coarser than espresso. A grind that is too fine can slow the passage of water and make the flow uneven. The official Bialetti Moka Express manual notably says not to press the coffee down and not to fill the water above the safety valve.

If moka coffee tastes burnt, check the grind, heat level and the point at which you remove the pot, following the instructions supplied with your particular model. Filter and French press: contact time changes everything #

With filter coffee, water passes through a bed of grounds. The grind needs to create enough resistance for effective extraction without blocking the flow. A medium grind often suits an electric filter brewer. With a V60, Chemex or another manual dripper, you adjust further according to brew volume, filter and pouring rate.

The SCA Certified Home Brewer page shows that filter brewers are assessed on several parameters, including water temperature, brew time and extraction uniformity. Even a good machine will produce an average cup when the grind is poorly matched.

Should you buy a burr grinder? #

If you mainly drink filter, French press or moka coffee, a good manual burr grinder can already make a substantial difference. Burrs crush beans more consistently than a blade grinder, making adjustments easier to interpret. A blade grinder can work in a pinch, but it often mixes fine powder with coarse fragments. Some particles then extract too quickly while others extract too slowly.

Precision becomes more important for espresso. The grinder needs fine, stable and repeatable adjustment. A grinder that works for French press will not necessarily be precise enough for a non-pressurised espresso machine.

Maintenance matters too. Coffee oils and fine particles accumulate inside a grinder and can eventually taste rancid. Brush the grinding chamber regularly, clear old residue and follow the manufacturer's instructions before removing the burrs.

Pre-ground coffee: how to limit the disadvantages #

Pre-ground coffee is convenient, but loses aroma faster than whole beans. On its page about storage and shelf life, the National Coffee Association recommends keeping coffee airtight and protecting it from air, moisture, heat and light.

When buying ground coffee, choose a grind labelled for your method: espresso, moka, filter or French press. Do not use espresso grind in a French press or French press grind in an espresso machine. Common mistakes #

  1. Looking for one universal grind: it does not exist. The right setting depends on the method, coffee and recipe.
  2. Assuming finer is better: a finer grind can increase intensity, but also bitterness, stalling and sediment.
  3. Changing the grind without weighing the dose: you cannot tell whether the flavour came from the setting or the amount of coffee.
  4. Forgetting the fines: an inconsistent grind can make a coffee taste both sharp and bitter.
  5. Grinding long before brewing: ground coffee oxidises more quickly and absorbs odours more readily.
  6. Ignoring the recipe: a short AeroPress, long cold brew and one-litre filter batch do not need the same setting.

The habit worth remembering #

Start with a grind suited to the method, brew a cup and taste it before touching the grinder. If the coffee is sharp and runs too quickly, go finer. If it is bitter, dry or very slow, go coarser. If it simply lacks presence, check the dose first.
