Coffee grind size: the right setting for every brewing method

The right grind size depends mainly on how water and coffee meet. A short extraction under pressure generally needs a finer grind. A long immersion can use a coarser one. This is a starting principle, not an unbreakable rule for every bean and brewer.

For a quick orientation: use fine grounds for espresso, medium-fine for a moka pot, medium for filter coffee, medium to medium-coarse for pour-over, coarse for French press, and coarse to very coarse for cold brew. Then let the cup guide you. If the coffee tastes dry, heavy and bitter, grind a little coarser. If it tastes thin, sharply sour or runs unusually quickly, grind a little finer.

Coffee grind size chart #

Numbers on coffee grinders are not standardised. Setting 12 can be fine on one model and coarse on another. Treat the textures below as starting points, not universal dial numbers.

Why grind size changes flavour #

Fine particles provide a greater combined surface area than the same mass of coarse particles. Soluble material can therefore enter the water more quickly. A finer grind also increases resistance in methods where water must pass through a bed of coffee.

Two processes matter at once:

  • Dissolution and diffusion affect how compounds move from the particles into the water.
  • Flow affects how long water remains in the coffee bed and how evenly it travels through it in filter and espresso brewing.

This is why a finer setting can both slow an espresso and increase extraction. In a French press, it mainly changes exposed surface, sediment and filtration rather than pressure.

The National Coffee Association gives a practical baseline: coarse for French press and cold brew, medium for drip and pour-over, and fine for espresso. Fine tuning still depends on taste.

Espresso: fine and highly sensitive #

Espresso is brewed quickly under pressure. A small movement of the grinder can make a large difference to flow. Distribute the grounds evenly through the basket and keep the dose constant while testing grind size.

Common signs include:

  • The shot rushes through, turns pale early and tastes thin or piercing: grind finer.
  • It only drips and tastes dry or unpleasantly bitter: grind coarser.
  • It sprays unevenly despite a plausible shot time: check distribution and channel formation.
  • It tastes balanced but too concentrated: adjust the brew ratio instead of moving the grinder at random.

Do not aim for a flour-like powder. Too many very fine particles can choke the basket and encourage uneven paths through the coffee. The heritage SCA definition uses 20 to 30 seconds as a reference, while contemporary recipes may sit outside that range according to roast and intended flavour.

Moka pot: finer than filter, coarser than espresso #

A moka pot works well with a medium-fine grind. The coffee should provide some resistance without becoming a compact plug. Do not tamp it.

If moka coffee tastes burnt or harsh, try these changes in order:

  1. Grind slightly coarser.
  2. Fill the funnel loosely without pressing.
  3. Use gentler heat.
  4. Remove the pot once the stream becomes pale and noisy.

The official Bialetti instructions say not to press the grounds and to keep water below the safety valve. These points concern the pot's intended safe operation as well as flavour.

Filter machine: begin with medium #

A medium grind is the most useful starting point for an electric filter machine. Water should wet the bed evenly and pass through within the brewer's intended cycle.

Look at the filter after brewing:

  • If water sits on the bed for a long time or the basket overflows, the grind may be too fine. Also check the dose, filter size and outlet.
  • If water passes very quickly and the drink tastes empty, grind finer.
  • If a large area of grounds remains dry, the machine may distribute water unevenly. Grind size alone may not solve that problem.

The SCA home brewer programme tests water temperature, contact time, concentration and extraction uniformity, among other variables. A certified machine still cannot select the ideal grind for a particular bag of coffee.

V60, Kalita and Chemex: control the flow #

With manual filters, pouring speed, number of pours, agitation and filter shape also affect flow. One universal target time would therefore be misleading.

Start around medium for a V60. Larger batches often need a somewhat coarser setting so that the extra water does not produce an excessively long contact time. Thicker Chemex papers and the brewer's geometry often favour a medium-coarse grind.

Make small adjustments:

  • very fast drawdown with a thin, sharp cup: finer;
  • marked stalling with a dry, heavy flavour: coarser;
  • good flavour but excessive concentration: change the ratio or add a little water after brewing;
  • bitter and sour sensations together: check how evenly you poured before changing the grinder.

French press: coarse, but not pebbles #

A French press uses full immersion, with water and coffee together for several minutes. A coarse, reasonably uniform grind makes the plunger easier to lower and limits fine sediment in the cup.

Begin with about four minutes. If the coffee is muddy, the grinder may be producing a large proportion of fine particles. A consistent burr grinder can help more than making the average grind extremely coarse. If the coffee is thin, try a slightly finer setting before greatly extending the steep.

Pour the finished coffee out after plunging. Coffee left in the press remains in contact with the grounds and continues to change.

AeroPress: let the recipe choose #

There is no single correct AeroPress grind. Short recipes with little water often use fine to medium-fine grounds. Longer immersion recipes can work at medium to medium-coarse.

The official AeroPress instructions provide a manufacturer baseline, but the brewer supports many variations:

  • If pressing is unusually difficult, grind coarser and check that the filter and brewer are assembled correctly.
  • If much of the water drains before you press, grind a little finer or insert the plunger early to slow the flow.
  • For a longer recipe, use a coarser grind so the added contact time does not automatically produce a heavy cup.

An AeroPress does not produce the same stable pressure as an espresso machine. Its versatility does not make it a technical substitute for espresso.

Cold brew: coarse and patient #

Cold brew normally steeps for many hours. A coarse to very coarse grind makes filtration easier and reduces fine particles in the drink. If the result is weak, grind a little finer, steep for longer or use more coffee. Change only one of these variables at a time.

Cold brew is often perceived as smooth and less sharp, but it is not universally "acid free". Research in Scientific Reports found differences between hot and cold extraction while also showing that the coffee and roast level affect the result. Perceived acidity and measured pH are not the same thing.

Use clean equipment, filter thoroughly and store cold brew below 5°C. Swiss federal guidance on refrigerated food stresses keeping it chilled and using it promptly.

A reliable way to dial in a grinder #

Use a simple test so that every cup teaches you something:

  1. Fix the recipe, coffee and water.
  2. Weigh both coffee and water.
  3. Record the grinder setting.
  4. Observe the time and flow.
  5. Taste once the drink has reached a safe temperature.
  6. Move the grinder by one small step for the next brew.

If the coffee tastes bitter, drying and heavy, go coarser. If it tastes thin, sharp or runs too quickly, go finer. If it tastes balanced but the strength is wrong, adjust the coffee-to-water ratio instead.

For a hand grinder, a note might read "French press 34 clicks, filter 24, moka 16". Those values apply only to that exact model and usually depend on a defined zero point. Never share a click count without naming the grinder and how it was counted.

Buying pre-ground coffee #

Choose a pack labelled for your method:

  • espresso for a portafilter espresso machine, not automatically for a moka pot;
  • moka or caffettiera for a moka pot;
  • filter for a filter machine and many drippers;
  • French press or coarse for a cafetière;
  • coarse for cold brew.

Ground coffee loses aroma faster than whole beans because more surface is exposed to air. The National Coffee Association recommends protecting coffee from air, moisture, heat and light. Keep an opened bag sealed, dry, cool and dark. A refrigerator is not automatically better because moisture and odours can affect the coffee.
