How to extract coffee properly: from bean to cup

Successful extraction is not a magic formula. It is the balance among five variables: the coffee, grind, coffee-to-water ratio, temperature and contact time. If the cup is too bitter, sharply sour or flat, change one variable at a time instead of restarting at random.

The most dependable way to improve is to weigh the coffee, weigh or measure the water, record the time and then adjust one variable. The Specialty Coffee Association now publishes separate standards for home brewers, home grinders and espresso machines. Guides from AboutCoffee, produced by the National Coffee Association, likewise show that equipment, grind and recipe need to be considered together.

The short answer #

Use these as practical starting points:

What “extraction” means #

Extracting coffee means transferring some soluble material from roasted beans into water: acids, sugars, aromatic compounds, bitter compounds, caffeine and substances that contribute body. They do not dissolve at the same speed or with perfect uniformity.

The liquid's composition evolves during brewing, but a sour sensation does not by itself prove under-extraction, just as bitterness does not prove over-extraction. The beans, roast, beverage concentration and uneven flow can create similar symptoms.

The goal is not to extract the maximum possible. It is to make a complete cup with that coffee and method without drifting into harshness or hollowness.

The five controls that really change the cup #

1. Grind size #

Grinding controls the surface exposed to water. Smaller particles can speed dissolution; in percolation they also increase resistance through the bed and may slow the flow. In immersion this hydraulic effect largely disappears because the water remains with the coffee. The correct setting therefore depends on the complete system.

2. Coffee-to-water ratio #

Weak coffee is not necessarily under-extracted. It may simply be too diluted. Conversely, a very strong coffee may be properly extracted but more concentrated than you enjoy.

For filter, French press and other gentle methods, try about 60 g per litre, equivalent to 15 g for 250 ml. Then adapt:

  • light cup with a clean flavour: increase the dose;
  • intense but balanced cup: decrease the dose or add a little hot water;
  • bitter cup: test grind or time before adding more coffee;
  • sharp and thin cup: go finer or extend contact, after checking flow.

Espresso uses a different comparison. The beverage is often weighed and a ratio near 1:2 is a common starting point, such as 18 g of dry coffee for about 36 g of espresso. It is not a universal rule and needs to suit the basket, machine and beans.

3. Water temperature #

Temperature changes extraction speed, but cannot be read alone. Cooler water may require more time, a different grind or different agitation. Very hot water can make some dark roasts harder to balance. A range of about 90 to 96°C is a common starting point for many hot filter methods, not a law for every device.

In practice:

  • light roast: try the upper part of the recipe's range first;
  • dark roast: try a slightly lower point within the permitted range;
  • kettle without control: follow the recipe, since cooling after boiling depends on volume, vessel and room temperature;
  • automatic machine: check grind and dose before changing an available temperature setting.

A Scientific Reports study of drip coffee found little sensory difference caused by temperature between 87 and 93°C when brew strength and extraction yield were kept constant. Its conclusions are limited to the tested coffee, equipment and protocol, but show why a few degrees cannot automatically fix a poorly adjusted recipe (study).

4. Contact time #

Time never works alone. Four minutes with a fine grind is not equivalent to four minutes with a coarse one. It is most useful as a diagnostic and repeatability measure.

The official AeroPress how-to page illustrates this flexibility. Its Signature recipes use medium or medium-fine grounds according to the coffee and model. Time, agitation, manual pressure and filter can all change the result.

5. Freshness and storage #

Freshness matters, but rigid windows are misleading. Dark-roasted coffee ground in advance and kept in a poorly closed bag loses aroma faster than well-stored whole beans. AboutCoffee's storage guide recommends an airtight, opaque container in a cool place and grinding just before brewing where possible.

At home:

  • buy quantities suited to your consumption;
  • protect beans from air, light, heat and moisture;
  • do not leave ground coffee open beside a hob or sunny window;
  • do not confuse “less aromatic” with “unsafe”. Dry coffee generally becomes stale, unless it has taken on moisture or shows mould.

This table chooses a first experiment, not a certain cause. Dose, distribution, preferential channels, water, roast and concentration can create similar sensations.

Method by method: realistic starting points #

Espresso #

Espresso concentrates errors. AboutCoffee describes a pressurised extraction with nearly boiling water in roughly 20 to 30 seconds. At home, weigh the dose, try a beverage ratio near 1:2 and adjust grind for an even flow. If the shot runs too quickly, go finer. If it drips painfully slowly and becomes dry or bitter, go slightly coarser.

Do not change dose, grind and tamping together. That makes it impossible to know what actually improved the shot. Also check distribution and signs of channels through the puck.

French press #

French press is forgiving but does not benefit from excessive fines. Start with a coarse grind, about 60 g per litre and roughly four minutes, then serve rather than leaving the drink on the grounds indefinitely. The metal filter allows more fine particles and oils through than paper, so the texture is naturally different.

Manual filter #

Pour-over mainly needs consistency. Rinse the paper if its recipe or manufacturer recommends it, distribute water without digging one deep hole and observe the drawdown. If everything passes unusually fast for the recipe, the grind may be too coarse or the dose too low. If the filter stalls, an overly fine grind or many fines is one possible cause.

Moka pot #

Moka makes concentrated coffee but is not espresso in the strict sense. Do not tamp it like an espresso puck. Use the grind and heat specified by your model's instructions. For the Moka Express, Bialetti specifies untamped moka-ground coffee, less than maximum heat on electric or ceramic hobs and removal when the upper chamber is full.

Cold brew #

Cold brew extracts slowly at low temperature. A coarse grind and a clearly recorded ratio help prevent a muddy concentrate. Filter carefully, keep it refrigerated and dilute to taste. A longer steep is not automatically better; it changes the balance among aroma, body and bitterness.

A simple improvement routine #

  1. Choose one coffee and keep it for several trials.
  2. Weigh coffee and water.
  3. Record grind, approximate temperature, time and result.
  4. Change one variable.
  5. Taste before adding milk, sugar or syrup.

After three or four trials, a pattern often appears. The recipe may need a finer grind, a slightly different temperature, a more precise dose or better storage.

Good extraction is built rather than guessed. A bitter, dry cup may justify testing less extraction; a sharply sour, hollow cup, more; a clean but weak cup, a less diluted ratio. Always check the beans and flow before concluding. With a scale, a consistent grind and a few notes, brewing becomes much more repeatable.
