Cold brew vs iced coffee: differences, recipes and safety

Iced coffee is brewed hot and then chilled. Cold brew is extracted for hours with cold water. Chilled or cold coffee is simply a broad description. These terms are often blurred on menus, but the distinction matters when choosing a flavour, estimating caffeine or storing a homemade batch.

Choose iced coffee when you want a lively drink in a few minutes. Make a small cold brew batch in the refrigerator when you prefer a style often perceived as rounder and want several servings ready. The method alone does not reveal the caffeine, sugar content or digestive tolerance of the finished drink.

Ask what the name means when ordering. A sweet bottled coffee with milk bears little resemblance to black iced filter coffee. A cold brew concentrate may also be several times stronger than a ready-to-drink product bearing almost the same label.

Iced coffee: hot extraction, cold service #

One reliable approach is concentrated filter coffee brewed directly over ice. Some of the brew water is replaced by ice, so the melting water forms part of the recipe. For 500 g of finished drink:

  1. Grind 30 g of coffee medium-fine.
  2. Brew with 300 g of hot water.
  3. Place 200 g of ice in the receiving jug.
  4. Filter directly onto the ice, then swirl until cold.

Adjust the ratio to the coffee and brewer. The important point is to account for dilution. Normal-strength filter coffee poured over two or three cubes often becomes lukewarm and watery.

Espresso works too. A double espresso with ice and cold water makes an iced Americano; cold milk makes an iced latte. Sugar dissolves more easily in the warm espresso than in the fully chilled drink.

Hot extraction can present volatile and fruit-led aromas vividly. A light, washed coffee may therefore taste clearer as iced coffee than as cold brew. That is a stylistic tendency, not a ranking of quality.

Cold brew: time instead of high temperature #

For a ready-to-drink batch, 70 to 90 g of coarsely ground coffee per litre of water is a practical starting range. A concentrate can use 150 to 200 g/L and be diluted when served. Label a concentrate clearly so that nobody mistakes it for a normal-strength drink.

A simple home method:

  1. Clean the vessel, lid and filter thoroughly.
  2. Grind 80 g of coffee coarsely and mix it with 1 litre of fresh drinking water.
  3. Steep, covered, for 12 to 18 hours in the refrigerator.
  4. Strain through metal, then through paper if a cleaner cup is wanted.
  5. Transfer to a clean sealed bottle, mark the date and refrigerate at once.

A coarse grind makes filtration easier, but it cannot guarantee an absence of bitterness. A very dark roast, excessive contact time or a grinder that creates many fines can make the drink heavy and harsh. If it tastes weak, grind slightly finer or extend the time. If it tastes dull, shorten the time or try a lighter roast.

Cold brew is not frappé, freddo or shakerato #

  • Frappé: a Greek drink based on foamed instant coffee, water and ice, often with sugar or milk.
  • Freddo espresso: freshly brewed espresso shaken or mixed with ice, generally served without the spent ice.
  • Freddo cappuccino: freddo espresso topped with cold foamed milk.
  • Shakerato: Italian espresso chilled in a shaker with ice and, depending on the recipe, sugar.
  • Iced latte: espresso, cold milk and ice.
  • Nitro cold brew: cold brew dispensed with nitrogen for a fine, creamy-looking head.

The same menu term can cover different sizes and recipes. On packaged products, the ingredient list, nutrition panel and caffeine declaration are more useful than the photograph or headline.

Caffeine: the name is not enough #

Cold brew is not automatically more caffeinated than iced coffee. Dry coffee dose, species and blend, extraction, finished volume and dilution all contribute. A concentrate made at 200 g/L will probably contain much more caffeine per litre than a ready-to-drink batch at 70 g/L. Diluting that concentrate one to one halves its concentration in the glass.

For a packaged drink, multiply the amount per 100 ml by the volume actually consumed. Exact home measurement would require analysis, but dry dose and final dilution still provide better guidance than the words cold brew.

For healthy, non-pregnant adults, the European Food Safety Authority found that single doses up to 200 mg and daily intakes up to 400 mg generally do not raise safety concerns. Acidity: pH, titratable acidity and taste differ #

Cold brew is frequently advertised as "less acidic", but no single measurement captures that claim. A study of six light-roast coffees found comparable pH values in hot and cold brews, ranging from about 4.85 to 5.13. Hot brews nevertheless had greater titratable acidity. pH and titratable acidity describe different chemical properties.

Cold brew is often perceived as rounder and less sharp. That does not demonstrate better clinical tolerance for reflux or stomach pain. Storage and food safety #

There is no universally validated official shelf life for homemade cold brew. Recipe, hygiene, temperature, filtration and added ingredients all affect risk. Commercial drinks may be pasteurised or high-pressure processed and cannot be compared directly with an untreated home batch.

A cautious home routine is to:

  • brew in the refrigerator rather than at room temperature;
  • use clean vessels and fresh drinking water;
  • keep the drink continuously at no more than 4 to 5°C;
  • make only three to four days' worth;
  • label the bottle with the preparation date;
  • add milk or plant-based drink only when serving;
  • discard it when the cold chain is unknown or the drink has changed noticeably.

Swiss food-hygiene guidance advises keeping perishable foods and leftovers cool, with sensitive products below 5°C. The three-to-four-day period here is a deliberately conservative household rule, not a microbiological guarantee.

In experimentally contaminated, untreated cold brew, E. coli O157:H7, Listeria monocytogenes and Salmonella enterica remained detectable for at least 60 days at 4°C without growing. This does not mean that ordinary cold brew contains these pathogens. It shows why refrigeration does not reliably remove contamination that was present at the start. Clean preparation still matters.

Smell and appearance can reveal spoilage but not every pathogen. A bottle that looks normal is not proof of safety. Follow the producer's date and storage instructions for commercial products.

Buying cold coffee in Switzerland #

Swiss shops may place cold brew, iced coffee and café latte beside one another. Compare:

  1. caffeine per 100 ml and per full bottle;
  2. added sugar;
  3. milk, plant-based drink and allergens;
  4. whether it is concentrate or ready to drink;
  5. refrigeration and use-after-opening instructions.

A large bottle with a moderate concentration can deliver more total caffeine than a small intense drink. The whole portion matters.
