From automatic to smart: how coffee machines have evolved

A “smart” coffee machine does not automatically make better coffee. It mainly automates grinding, dose, temperature, volume, milk recipes, user profiles, maintenance prompts and sometimes app control. Useful progress makes important variables repeatable with fewer actions.

Ask first about stable extraction, easy cleaning, spare parts, low standby consumption and the drinks you actually make, not whether the box says AI.

From steam to home automation #

Espresso machinery grew from the wish to serve coffee faster in busy venues. Smithsonian traces the path through Angelo Moriondo, Luigi Bezzera and Desiderio Pavoni. Early systems were large steam and boiler machines, not easy household appliances. They nonetheless established water, fine coffee, pressure and contact time as key variables.

Pumps, more stable groups and precise grinders made concentrated brewing more repeatable. That framework enabled later automation.

A bean-to-cup machine grinds, doses, brews, ejects grounds and rinses parts of the system. Its most valuable advances are often quiet ones: more even grinding, accessible adjustments, stored water volumes, a removable or well-cleaned brew unit and understandable descaling.

Super-automatic models add displays, profiles and milk recipes, but also wet components. Milk hoses, carafes, grounds bins and trays still require care. Before buying, check whether milk parts come apart, wear items are sold separately and normal operation remains possible without an app.

What “smart” means #

The first level is memory: favourites, intensity, temperature and volume. The second is diagnosis: drink counters, filter and descaling prompts, or sensors for water and grounds. These prompts are often more useful than remote control.

The third level promises adjustment to beans or habits. A system may recommend settings but does not automatically know roast age, water chemistry, current grind or your taste. The fourth is connectivity. An app stores recipes and sends warnings; it cannot repair stale beans or a dirty brew unit.

Remote starting makes sense only when the cup, water, beans and bins are ready. A kitchen appliance should remain safe and fully usable offline.

What technology improves #

Useful engineering stabilises grinding, heat, water distribution and dose. The SCA certifies filter brewers for criteria including temperature, contact time, extraction and consistency. The general principle applies elsewhere: measurement is valuable when it stabilises something relevant to flavour.

Technology can improve repeatability, convenience, stored preferences and service prompts. It cannot compensate for rancid, unsuitable or extremely oily beans. The guide to coffee extraction explains the unchanged fundamentals.

Energy and network standby #

EU Regulation 2023/826 sets requirements for off, standby and networked standby consumption across many household and office products and replaced the earlier horizontal regulation in May 2025. Further limits take effect from 2027. It is not direct Swiss law but matters to products sold in several European markets.

Look for automatic shut-off, clear consumption information and the ability to disable Wi-Fi or Bluetooth. Permanent connection is not a brewing-quality feature.

Repairability is a smart feature #

Since 31 July 2026, EU Member States have had to apply their transposed rules under Directive 2024/1799 on repair of goods. The framework is not Swiss law, yet it provides a useful comparison. Available seals, nozzles, containers, brew units, documentation and service can extend life more than another touchscreen.

Should you buy one? #

Smart functions may be worthwhile when several people drink different short coffees or milk recipes, guided care genuinely helps and offline use remains intact. They are less useful for filter drinkers, manual espresso enthusiasts or anyone prioritising simplicity and repair.

Conclusion #

Coffee machines evolved from mechanical pressure to automation and then personalisation. Progress is real when it stabilises extraction, makes care easier and extends service life. An app alone does not make a good cup; fresh coffee, suitable grind, sensible water and a clean machine remain decisive.
