For balanced French press coffee, 60 g of coffee per litre of water, a consistently coarse grind and about four minutes of contact time make a reliable starting point. Use fresh, neutral-tasting water, pour it hot and serve the coffee as soon as you have lowered the plunger. This solves most problems without turning a simple brewer into a laboratory project.
A French press, also called a cafetière or coffee plunger, is a full-immersion brewer. All of the grounds remain in contact with the water during brewing. A metal mesh then separates most of the grounds from the drink. Unlike paper, it retains relatively little of the coffee oils and fine particles. That explains the characteristic full body and some sediment in the cup.
Basic recipe for several sizes #

The serving descriptions are only a guide because cups differ greatly in size. Water and coffee measured in grams or millilitres are more meaningful. For a more concentrated cup, increase the dose to about 65 or 70 g/L. If the flavour is balanced but simply too strong, reducing the dose is the cleanest correction. If it tastes sour, hollow or bitter, the main issue is more likely to be grind, time, temperature or roast.
The right grind size #
Begin distinctly coarser than filter coffee and much coarser than espresso. The particles should look fairly even and roughly like coarse salt. Comparisons with breadcrumbs or sea salt are only visual shorthand. Taste and the quantity of fine sediment passing through the mesh matter more.
An excessively fine grind can make the drink silty, extract quickly and make the plunger hard to lower. An extremely coarse grind does not automatically make good French press coffee either. If the pieces are too large, a four-minute brew may taste weak and underdeveloped.
Adjust according to the result:
- thin, sharply sour or lacking sweetness: grind a little finer or brew longer;
- dry, harsh or markedly bitter: grind a little coarser or shorten contact time;
- good flavour but excessive sediment: improve grind consistency and pour more gently;
- plunger is difficult to move: do not force it, check the grind and filter assembly.

Water and temperature #
Fresh drinking water without an obvious chlorine, metallic or stale taste is a sound base. Very hard water can mute flavour and leaves scale. Completely demineralised water is not an ideal default either. If your tap water tastes pleasant, try it first. A properly maintained filter jug is worth comparing when taste or hardness is a problem.
For hot immersion brewing, about 92 to 96°C is a useful starting range. The technical requirements for the SCA Certified Home Brewer programme use this range at the coffee bed when testing filter machines. It is not a separate mandatory French press standard, but it is a transparent reference point.
Without a thermometer, bring the water to the boil, allow the violent bubbling to settle and pour. A universal waiting time is inaccurate because water volume, kettle and room temperature differ. Light roasts often tolerate, and sometimes need, hotter water for sufficient extraction. A slightly lower temperature can help a very dark roast if it tastes harsh.
French press method, step by step #
- Preheat the carafe. Swirl a little hot water inside and discard it. This is particularly helpful with a cold glass vessel.
- Weigh and grind the coffee. Use 30 g for 500 ml as an initial recipe.
- Add the grounds. Check that the press stands securely and has no damage.
- Pour all the water. Wet the complete bed and start the timer when water first touches coffee.
- Stir gently. One careful movement is enough to break up dry pockets. With glass, wood, plastic or silicone avoids a hard metal impact.
- Steep for four minutes. Fit the lid but do not lower the plunger yet.
- Press slowly and level. Apply light, steady pressure. Strong resistance is a warning, not an invitation to push harder.
- Pour immediately. Serve the whole brew or transfer the remainder to a clean, preheated jug.
The metal mesh does not completely isolate liquid from grounds. Flavour and temperature therefore continue changing while coffee remains in the press. Decanting is more reliable than assuming a lowered plunger stops every interaction.
Is four minutes always correct? #
Four minutes is a practical reference, not a law of nature. A very coarse grind or lightly roasted coffee that extracts reluctantly may need more time. A finer grind or dark roast may taste balanced sooner.
Test in small steps of about 30 seconds while keeping dose and water temperature unchanged. If you alter grind, time and dose together, you will not know which change improved the result.
Longer contact does not mean that every coffee suddenly becomes undrinkable. Immersion extraction approaches equilibrium and does not continue at the same rate indefinitely. Even so, fine particles, falling temperature and prolonged standing can make the drink less pleasant. Taste and repeatability are the most useful criteria.
Reducing bitterness and sediment #
Some sediment is normal with a metal filter. A paper-clear cup is not a realistic target. These steps reduce distracting silt:
- Use a good grinder that creates fewer extremely fine particles.
- Press slowly without compacting the bed as hard as possible.
- Let the press stand quietly for a short moment after plunging.
- Pour steadily and leave the final small amount in the carafe.
- Clean and reassemble the multi-part mesh correctly.
If the coffee is bitter, do not immediately reach for cooler water. Check roast, grind, contact time and cleanliness first. Dark roasts already carry more roast bitterness. Rancid oil trapped in the mesh can also make every fresh brew taste stale and sharp.
If the coffee is balanced but too concentrated, reduce the next dose or dilute the finished cup slightly. If it is thin and bitter at the same time, a large quantity of fine particles or an uneven grind is more likely than a simple dosing problem.
Which coffee works best? #
No origin is reserved for the French press. The brewer emphasises body and texture, so chocolate, nut and caramel profiles often feel immediately at home. Light, fruity coffees can also work, though they usually appear less clear than they would through paper.
Choose whole beans with a meaningful roast date and grind shortly before brewing. Store them sealed, dry, dark and at a stable room temperature. The National Coffee Association identifies air, moisture, heat and light as the principal conditions from which coffee should be protected.

Cleaning and safe use #
Remove the grounds after every brew. Do not routinely wash large amounts down the sink, where they can combine with grease and other deposits. Dismantle the filter as instructed by its manufacturer and wash the discs, coil, rod and lid with a suitable mild detergent. Rinse thoroughly.
Inspect a glass carafe for chips and cracks. Avoid hard impacts and sudden temperature changes. Never force the plunger. If it jams, lift it slightly, wait and check the grind or filter assembly. Keep one hand on the handle and place the press on a stable, heat-resistant, non-slip surface while plunging.
French press coffee, cafestol and cholesterol #
A metal mesh retains much less of the diterpenes cafestol and kahweol than paper. This does not make an occasional French press a reason for dramatic warnings. Intake matters.
In a six-month randomised trial, 46 healthy adults drank 0.9 litres per day of strong French press or paper-filtered coffee. After 24 weeks, LDL cholesterol in the French press group was on average 0.26 mmol/L higher relative to the filter group. That was a high daily intake and should not be applied directly to one occasional cup. It does show that filtration can matter when consumption is large and regular.
Anyone with raised blood lipids, or who drinks several large servings of unfiltered coffee every day, can replace some with paper-filtered coffee and discuss their personal situation with a healthcare professional. "French press is unhealthy" is too broad, but so is the claim that filter method never matters.
Can a French press make cold brew? #
Yes. The vessel can act as the brewing container and first metal filter. A starting recipe is 70 to 90 g of coarsely ground coffee per litre of water, steeped for 12 to 18 hours in the refrigerator. Press slowly and, if desired, filter again through paper.
Use clean equipment, keep the drink continuously below 5°C and consume it promptly. Cold extraction does not sterilise coffee. Add milk or plant-based drink when serving and follow its separate refrigeration instructions.
