Choose a plant-based drink according to the cup you want: barista oat or soy for a creamy latte, almond or hazelnut for a nutty note, coconut for a dessert recipe, and rice to soften a long coffee without aiming for foam. There is no universal best option. It depends on the coffee, desired texture, your tolerance and the product label.
“Plant-based” does not automatically mean healthier, lighter or better on every environmental measure. These drinks vary greatly in protein, added sugar, oils, calcium, vitamins and allergens. A successful choice considers both the cup and the composition.

A barista version makes cappuccino and latte easier. It often contains more dry matter or a combination of protein, oil and stabilisers designed to behave more consistently under heat. This does not automatically make it nutritionally better.
Why some plant-based drinks separate in coffee #
Coffee is hot, often acidic and contains compounds that can destabilise a plant-based drink. The cup may turn grainy, the foam may collapse or the liquid may separate. Visible separation alone proves neither danger nor safety. Check the date, cold chain, smell and manufacturer's instructions, without treating a normal appearance as a hygiene guarantee.
Three steps reduce unwanted separation:
- heat the plant-based drink gradually without boiling it;
- avoid pouring a very cold drink directly into extremely hot espresso;
- test the same drink with the same coffee before changing several variables.

Oat, soy, almond and coconut: strengths and limits #
Oat drink #
Oat is often the easiest starting point for a plant-based latte. It rounds out espresso, tastes naturally gentle and commonly performs well in a barista version. Formula remains important: some products contain oils or added sugar. Anyone who must avoid gluten strictly should look for suitable certification. Oat is a sensible first test for a neutral and creamy profile.
Soy drink #
Soy supplies more protein than many other plant-based drinks, which often supports foam. A barista version can make a convincing cappuccino. Its own flavour may be more noticeable, and soy is an allergen. It can also separate more readily with very acidic espresso, depending on the brand.
Almond drink #
Almond brings a dry, lightly roasted nut note. It can suit filter coffee, light iced coffee or a delicate latte. Its foam is highly variable. Many almond drinks are relatively dilute and give less body. Check sweetened versions too, because added sweetness can mask coffee.
Coconut drink #
Coconut works when its flavour is intentional: mocha, dessert-style iced coffee, chocolate or spice. It is less suitable for a neutral cup. Some coconut drinks and culinary coconut milk are rich and contain more saturated fat than other plant-based choices. Begin with a small amount if you still want to taste the coffee.
Rice, hazelnut, cashew or pea drinks #
Rice softens coffee but foams poorly. Hazelnut and cashew are indulgent and often more interesting in recipes than in neutral everyday coffee. Pea-based products can work well in barista formulas, but their flavour varies strongly. Test a small carton before adopting one as your standard.
Nutrition: read the label, not just the plant name #
The detailed Swiss dietary recommendations, available in French, stress that plant-based substitutes do not all have the same nutritional value as dairy products. Soy is often closer to cow's milk in protein, while oat, rice and almond drinks generally provide less.
A study involving Agroscope measured products available on the Swiss market and found large differences by plant base and fortification (PubMed). It examined a limited product sample at one point in time and cannot predict every current brand. Compare protein, calcium, iodine, vitamins and sugars on the product label.
Before buying, check:
- added sugars, especially in vanilla, chocolate and indulgent versions;
- protein if the drink regularly replaces milk;
- calcium, vitamin D or B12 fortification;
- oils and stabilisers in barista formulas;
- allergens such as soy, almond, hazelnut and cashew, plus gluten certification for oat where needed.
During pregnancy, when preparing a drink for a child, or when managing a digestive or metabolic condition, the addition is not merely a flavour detail. It changes sugars, energy, allergens and sometimes tolerance. An ordinary plant-based drink is not infant formula and must not be used as one.
What happens to the caffeine? #
Plant-based drinks do not remove caffeine from coffee. They dilute and soften the flavour, but caffeine comes mainly from the coffee. A large plant-based latte made with a double espresso can still contain a substantial dose.
According to EFSA, single doses up to 200 mg and totals up to 400 mg per day do not raise safety concerns for healthy adults in the general population. EFSA gives 200 mg per day during pregnancy and lactation and notes that 100 mg close to bedtime may affect sleep in some adults. These values do not cover people with a medical condition, replace no medical advice and do not mean everyone tolerates the same amount.

Which plant-based drink suits each recipe? #
For a plant-based latte #
Use one espresso or 50 ml of strong coffee with 150 to 180 ml of barista oat drink. Heat gently, froth and pour. If the coffee disappears, choose a stronger base or use less plant drink. Our guide to coffee for a homemade latte gives suitable profiles.
For a soy cappuccino #
Barista soy is often more stable than a standard version. Keep the cup relatively short: one espresso, roughly 100 to 120 ml of heated drink and fine foam. Avoid overheating it, which can make vegetal flavours more pronounced.
For almond iced coffee #
Almond is pleasant cold. Pour 100 ml of cooled coffee or diluted cold brew over ice, add 100 to 120 ml of unsweetened almond drink, then taste before adding syrup. If you start with concentrate, the homemade cold brew recipe helps keep the ratio sensible.
For coconut mocha #
Mix one teaspoon of unsweetened cocoa with a hot espresso, add 100 to 120 ml of heated coconut drink and sweeten only after tasting. Coconut quickly dominates, so start sparingly.
Homemade plant-based drinks: possible, but not ideal for everything #
A homemade plant-based drink gives you control over ingredients and flavour. It is less reliable for cappuccino because it often lacks stability when heated. It may be adequate for filter or iced coffee.
For a simple oat drink, briefly blend 80 g of rolled oats with one litre of cold water and a pinch of salt, then filter. Blending for too long can make it slimy. For almond, soak and rinse the nuts, blend them with water and filter carefully.
For hygiene, prepare small amounts with clean utensils, refrigerate promptly and do not assume one universal storage life. The Swiss Federal Food Safety and Veterinary Office guidance (German) recommends refrigerating perishables and leftovers, cleaning utensils thoroughly and following storage instructions. Unusual smell, taste or texture means the drink should be discarded, but their absence does not guarantee safety. A home recipe does not have the validated shelf life of an unopened UHT carton.
Consider environmental impact with nuance #
Plant-based drinks often have lower greenhouse-gas emissions and land use than cow's milk, but no option wins on every measure. Data summarised by Our World in Data show, for example, that almond has greater water use than some other plant drinks. Oat, soy, rice and coconut each raise their own questions about farming, transport, packaging and origin.
A practical choice is a drink you actually finish, in a pack size suited to your use and with a clear ingredient list. A theoretically better option loses part of its advantage if half of it goes to waste.
Common mistakes #
- Buying a sweetened version without noticing.
- Boiling the plant-based drink before pouring.
- Changing the coffee, grind and drink at the same time, then losing track of what failed.
- Confusing “lactose-free” with “suitable for everyone”.
- Forgetting that barista versions may contain oils, stabilisers or more energy.
- Making too much homemade drink and keeping it too long.
