Types of milk foam: microfoam, macrofoam and heated milk

Microfoam, macrofoam and simply heated milk do not produce the same cup. Microfoam is fine, glossy and fluid, making it suitable for latte art, flat whites and modern cappuccinos. Macrofoam contains larger bubbles and forms a more visible layer if you enjoy a very foamy cappuccino. Heated milk adds sweetness and warmth without aiming for extra volume.

The best foam is therefore not always the tallest. A flexible texture that blends with the espresso usually makes a more balanced cappuccino than dry foam sitting on top. A simple milk coffee does not require spectacular foam at all.

Microfoam: fine foam for latte art and modern cappuccino #

Microfoam is textured milk containing very small air bubbles. Its surface looks glossy and almost satin-like. When made well, it pours like light cream and gradually blends into the espresso.

It is the preferred texture for:

  1. latte art, because the milk remains fluid enough to draw with;
  2. a flat white, which needs a subtle and integrated foam layer;
  3. a latte, where the milk should stay smooth and even;
  4. a modern cappuccino with noticeable but not dry foam.

Microfoam is not defined by the amount of air alone. Bubble size and distribution matter more. Very voluminous foam full of visible bubbles is not microfoam, however impressive it first appears.

Macrofoam: a visible, generous layer #

Macrofoam contains larger bubbles. It expands further, looks more obvious and feels airier. It may suit an old-fashioned foamy cappuccino or a drink where a clearly separate layer is part of the appeal.

That separation is also its weakness. If liquid milk stays underneath while dry foam floats on top, the drink can feel unbalanced: an extremely foamy first sip followed by a much milkier lower layer.

Macrofoam can be pleasant in an indulgent cup, but it is less suitable for latte art and drinks in which milk should merge with espresso.

Simply heated milk: a good choice for basic milk coffee #

Not every milk drink needs foam. In a milk coffee, a straightforward latte or a large filter coffee with milk, temperature and sweetness are often more important.

Heat the milk gently and pour it without trying to incorporate much air. Avoid boiling it, which can make it catch on the pan, taste cooked and seem less sweet. Around 55 to 65°C is a practical home starting point, not a universal standard or safety threshold. The product, quantity, equipment and desired serving temperature may justify an adjustment.

Why does milk foam? #

Milk foams when air is introduced while heat and movement alter the structure of the liquid. Milk proteins help stabilise bubbles. Fat adds roundness in the mouth, but can also change foaming performance depending on the system.

Stability depends on several factors, including protein content, protein-to-fat ratio, milk processing, temperature and aeration method. A study in Food and Bioprocess Technology compared reconstituted milk-powder dispersions and whole-milk systems using steam injection or mechanical mixing. Under those conditions, proteins contributed to foaming and the protein-to-fat ratio strongly affected the result (Springer). The study does not establish a universal ranking of every retail milk and did not test plant-based drinks.

In practice, even two brands of whole milk can behave differently. A plant-based drink labelled “barista” may foam better than its standard version because its formula targets texture. That label does not guarantee a specific result or better nutritional quality.

Which milk works for each type of foam? #

Whole milk often produces a rounder texture and gentler flavour. Semi-skimmed milk can foam well with a lighter mouthfeel. Skimmed milk may gain volume easily, but its foam can feel drier and less indulgent.

With plant-based drinks, the plant name is not enough. Oat, soy, almond and pea products can all work, yet their proteins, oils, stabilisers, sugars and acidity change how they behave under heat. Barista versions are often more reliable, but brands still vary.

Useful starting points:

  1. for latte art: whole milk or a sufficiently fluid barista plant drink;
  2. for a very foamy cappuccino: semi-skimmed milk or well-textured whole milk;
  3. for simple milk coffee: whole milk, semi-skimmed milk or a plant drink to taste;
  4. for a cold drink: prepare foam separately and apply strict hygiene.

How to make fine foam with a steam wand #

An espresso-machine steam wand gives the most precise control. The movement has two phases: introduce a small amount of air, then create a whirlpool to refine the texture.

  1. Pour cold milk into a clean pitcher, filling it no more than halfway.
  2. Purge the steam wand briefly before starting.
  3. Place the tip just below the milk surface.
  4. Open the steam and introduce a little air at the beginning.
  5. Position the pitcher so a quiet whirlpool forms.
  6. Begin by stopping around 55 to 65°C, then adjust cautiously for the product and desired result.
  7. Wipe and purge the wand immediately after use.
  8. Tap the pitcher, swirl the milk and pour promptly.

A very gentle paper-tearing sound is normal at first. Loud splashing or large bubbles usually means the tip is too high. If the milk heats without gaining volume, the tip is probably too deep.

Perfect foam cannot compensate for unbalanced espresso. If necessary, first improve your espresso at home.

How can you recognise failed milk foam? #

The symptom usually points towards the most useful adjustment.

An automatic frother gives you less control over bubble size. This is usually fine for milk coffee or an indulgent drink, but more limiting for detailed latte art.

Do not neglect hygiene #

Milk and opened plant-based drinks are perishable. Do not pour already heated or frothed milk back into its carton. Do not leave a lukewarm pitcher on the counter intending to reuse it later.

The Swiss Federal Food Safety and Veterinary Office guidance (German) recommends cleaning kitchen utensils thoroughly, refrigerating perishable foods and leftovers, and following the manufacturer's storage instructions. At home, heat only what you need, serve without a long delay and wash the pitcher immediately.

For a machine with a steam wand:

  1. purge before use to remove residual water;
  2. wipe the wand with a dedicated clean cloth;
  3. purge after use to limit milk residue;
  4. clean milk circuits regularly according to the manufacturer.

This routine protects both flavour and hygiene. Dried milk residue quickly develops unpleasant odours.

Which foam suits each drink? #

For cappuccino, aim for fine but visible foam in a relatively small cup. The Istituto Espresso Italiano describes its certified espresso as about 25 ml with fine crema and no large bubbles (Istituto Espresso Italiano). That definition concerns the espresso base, not a universal milk-to-foam ratio. The important balance is recognisable coffee, sweet milk and flexible foam.

For a latte, reduce foam and use more heated milk. A flat white calls for even finer microfoam and usually a smaller cup than a large latte. Simple heated milk is enough for milk coffee. The useful question is not how to make the most foam, but which texture best serves the drink.
