How to grind coffee for each brewing method

To grind coffee well, start with the brewing method. A short or pressurised extraction generally needs a finer grind, while a long immersion often uses a coarser one. Percolation also involves resistance through the coffee bed: grinding finer exposes more surface, but can slow the flow considerably. Useful starting points are fine for espresso, medium-fine for moka, medium for filter, medium to medium-coarse for V60 or Chemex, variable for AeroPress, coarse for French press and coarse to very coarse for cold brew.

Why grind size changes flavour so much #

Grind size determines the surface exposed to water and, in percolation, the resistance encountered by the liquid. Small particles can speed dissolution while slowing the flow. In immersion, where water remains with the grounds, the hydraulic effect is different. These mechanisms can unbalance a cup:

  • too fine: slow flow, bitterness, dryness or sediment;
  • too coarse: fast flow, sharp acidity or a light, watery cup;
  • inconsistent: fine powder and large fragments can extract differently in the same brew.

The Specialty Coffee Association now publishes separate standards for home grinders, home brewers and espresso machines. This structure is a reminder that particle distribution and brewing equipment need to be assessed together. At home, change one variable at a time. When changing the grind, keep the dose and water the same, then taste.

Blade grinder or burr grinder? #

A blade grinder can work in a pinch, but chops beans inconsistently. It often creates fine powder and large fragments in the same dose. The fines may extract rapidly, while larger pieces may contribute less, making the cup difficult to correct.

A burr grinder is preferable when you want precise adjustment. Beans pass between two conical or flat burrs, and their spacing controls the particle size. The result is generally more regular and repeatable. A good manual burr grinder is often enough for filter, moka, French press and AeroPress. Espresso: fine, but not powdery #

Espresso uses a fine grind because water crosses a compact puck in a short time. A small change can transform the flow and the cup.

After checking that dose, distribution in the basket and recipe are consistent, use these clues:

  • the shot runs in a fast stream, pales quickly and tastes sharply sour: go finer;
  • it barely drips, becomes very bitter or leaves a dry sensation: go coarser;
  • it tastes intense, sweet and balanced: record the setting.

Moka pot: finer than filter, coarser than espresso #

A moka pot normally uses a medium-fine grind. It needs moderate resistance without forming a compact blockage. The Bialetti Moka Express manual gives two especially important instructions for that model: use coffee ground for moka without pressing it down, and fill water only to the lower edge of the safety valve.

If moka coffee tastes bitter or burnt, start by:

  1. grinding slightly coarser;
  2. making sure the coffee is not tamped in the funnel;
  3. using gentler heat;
  4. removing the pot at the point specified by its manual. For the Moka Express, Bialetti says to remove it when the upper chamber is full.

Filter, V60 and Chemex: aim for regular flow #

A medium grind often works for an electric filter brewer. With manual pour-over methods such as V60, a dripper or Chemex, the setting depends more on volume, paper thickness, pouring rate and total drawdown time.

Practical clues:

  • very fast drawdown with a pale, sharp cup: go finer;
  • stalled filter with a dry or heavy cup: go coarser;
  • balanced but weak cup: consider increasing the dose before changing everything;
  • balanced but too intense: reduce the dose or dilute slightly.

French press: coarse, but not pebbles #

French press is an immersion method. Water and coffee remain together for several minutes, so a coarse grind can limit heavy bitterness and fine particles in the cup.

A useful starting point, adjusted to your recipe and brewer instructions, is:

  • a texture similar to rock salt;
  • the water temperature specified by the recipe;
  • about four minutes as a first trial;
  • slow pressure on the plunger.

If the cup is muddy, grind coarser or pour more gently after pressing. If it is too light, go slightly finer or raise the dose a little. The complete method is in our French press coffee guide.

AeroPress: the grind depends on the recipe #

AeroPress is more flexible than most methods. A short, concentrated recipe can use a fine grind, while a longer recipe may require a different balance of grind, agitation and time. The official AeroPress how-to page includes Signature recipes using medium or medium-fine grounds depending on the coffee and model. It does not prescribe one setting for every recipe.

To get started without getting lost:

  • short one-to-two-minute recipe: try fine to medium-fine;
  • gentler two-to-four-minute recipe: try medium;
  • hard to press or rough cup: go coarser;
  • thin, sharply sour cup: go finer.

Cold brew: coarse and patient #

Cold brew extracts slowly at low temperature. A coarse to very coarse grind helps limit a dusty texture and makes filtration easier. A study of cold-brew extraction kinetics found that caffeine and some other compounds approached equilibrium after several hours in the samples tested. That does not establish a universal recipe.

Start coarse and steep for roughly 12 to 18 hours under refrigeration. If the result is too light, go slightly finer or extend the steep. If it becomes dry, dusty or difficult to filter, go coarser.

Storage: grind just before brewing #

Ground coffee generally loses aroma faster than whole beans because more surface is exposed to air. The National Coffee Association recommends protecting coffee from air, moisture, heat and light.

In practice:

  • keep beans in an airtight container in a cool, dry and dark place;
  • grind only the dose you need;
  • do not leave ground coffee open near a hob, window or moisture source;
  • if refrigerating or freezing beans, use a genuinely airtight container and avoid condensation. Views and needs differ with climate and use.

If you do not know which way to turn the grinder, start with the cup:

A simple way to dial in a grinder #

  1. Choose a fixed dose that suits the recipe and equipment, such as 15 g for an individual filter or the dose intended for your espresso basket.
  2. Record the grinder setting.
  3. Brew with the same water, temperature and target time.
  4. Taste before adding sugar or milk.
  5. Move one or two steps, then repeat.

The right grind is not a universal number. It is the setting that produces a balanced cup with your beans and method: enough intensity, without hollowness, aggression or excessive sediment. Once you find it, write it down. The next brew will be much easier to reproduce.
