Why does my coffee taste bitter? Causes and fixes

Coffee can taste too bitter for several reasons: excessive or uneven extraction, a roast that is too dark for your palate, high concentration, oxidised coffee or dirty equipment. Bitterness is therefore not automatic proof of “over-extraction”. A cup that tastes both sour and bitter may even point to uneven extraction, such as preferential channels through poorly distributed grounds.

Identify the sensation first, then change one variable. If flow is slow and the finish is dry, try a slightly coarser grind or shorter contact. If flow looks normal, inspect roast, ratio, water, freshness and cleanliness instead.

Bitter, sour, astringent or simply strong? #

These descriptions are diagnostic aids, not objective labels. One person’s welcome dark-chocolate note can be another person’s excessive bitterness.

Bitterness is naturally part of coffee #

Bitterness is not inherently a defect. It contributes to the balance of espresso, strong filter coffee and moka. It becomes unpleasant when it overwhelms sweetness, acidity and the coffee’s other aromas.

Several compounds contribute, including caffeine and molecules formed or transformed during roasting. Perception cannot be reduced to one extraction number. Bean, roast, concentration, grind, water and contact time all interact.

Common causes and practical corrections #

1. The grind is too fine #

Fine grounds expose more accessible surface and often slow water flow. That resistance is useful in espresso until it becomes excessive. In filter, French press or moka brewing, an unsuitable fine grind can create a heavy, dry and bitter cup.

2. Contact or flow lasts too long #

With an otherwise comparable recipe, extraction progresses as contact continues. A French press left on its grounds, a filter that drains unusually slowly or an espresso that only drips can end with heavy bitterness.

Four minutes for French press or a stated pour-over drawdown is only a recipe starting point. Volume, brewer and coffee may justify a different time. Look for a meaningful deviation from your own successful recipe rather than treating one number as a law.

3. Water temperature does not suit the recipe #

Higher temperature generally speeds extraction, but it does not mechanically make every coffee bitter. Roast, grind, flow and ratio interact. In the SCA’s 2017 test for certified home filter brewers, water at the coffee bed must reach 92°C, remain at or above 92°C and never exceed 96°C. That is a test window for those filter machines, not a rule for every brewing method.

There is no universal requirement to wait exactly 30 or 60 seconds after a kettle boils. Altitude, water volume and vessel change the real temperature. Start with a coherent recipe, and only lower the water by a few degrees once grind, time and ratio are plausible. 4. The drink is concentrated rather than bitter #

An intense cup is easily described as bitter. Around 60g per litre, or roughly 1:16 to 1:17, is an easy filter-coffee starting ratio. If the drink is powerful but not drying, reduce the dose or dilute it in a controlled way after brewing.

5. The roast is too dark for your taste #

Very dark roasts often feature pronounced dark cocoa, smoke and heavily toasted notes. That style may work in milk yet dominate when served black. Test a medium roast with the same recipe before rebuilding every machine setting.

Arabica or robusta alone does not decide quality or bitterness. Robusta generally contains more caffeine and can add body and crema, but roast level, green-coffee quality and extraction also matter.

6. Coffee or residue is stale #

Oxidised coffee loses delicate aromas and can taste flat, dusty or rancid. Buy amounts you can use, seal the pack and grind shortly before brewing where possible. The National Coffee Association recommends protection from air, moisture, heat and light.

7. Water changes the cup #

Chlorine odour or mineral composition that does not suit a recipe can hide flavour. Fully demineralised water is not a universal solution and may be inappropriate for some machines. A quick troubleshooting order #

Change one item and note the result:

  1. Go one small step coarser if flow is slow.
  2. Shorten contact or stop the extraction earlier.
  3. Verify the coffee-to-water ratio with scales.
  4. Only then lower water by 2–3°C if the equipment permits it.
  5. Clean the machine, basket, brewer and grinder as instructed.
  6. Test a medium roast or a different coffee.
  7. Filter water only where chlorine, hardness or manufacturer guidance provides a reason.

Changing grind, dose, bean and water together makes it impossible to identify what helped.

Advice by brewing method #

Espresso #

A bitter espresso often runs slowly and finishes dry. Try slightly coarser, a shorter yield, or a modest dose change within the basket specification. If it is both sour and bitter, improve distribution and break up clumps. How to make espresso at home explains flow and yield.

Filter coffee #

Check for slow drainage, excessive fines and prolonged time on a hotplate. Rinse paper only when its maker requires it, it smells of card or preheating is useful. The step is not compulsory for every product, as the guide to rinsing coffee filters explains.

French press and moka #

A fairly coarse grind and about four minutes are useful French press starts. Pour the drink away from the grounds after pressing. With moka, do not tamp, use moderate heat and avoid prolonged final sputtering. Follow how to use a moka pot for the complete sequence.

Cold brew #

Grounds that are too fine, poor filtration or undiluted concentrate can taste heavy and bitter. Begin with the time and ratio of the specific recipe. More than 24 hours is not a universal failure threshold for all ratios and temperatures.

Does salt remove bitterness? #

Salt can alter the perception of particular bitter compounds, but it does not suppress every bitterness equally. A 2024 laboratory study examined four of roughly two dozen known human bitter receptors and found different effects for different receptor–compound pairs. It does not demonstrate that a pinch improves every coffee.

Milk or sugar can mask bitterness, but they do not correct uneven flow or stale residue. Add them because you enjoy them, not as a substitute for diagnosis.

Do not begin by assuming bitterness always means over-extraction. Identify the sensation, observe flow, check ratio and cleanliness, then change grind, time or temperature individually. If the recipe is technically sound but still too bitter for you, a less dark roast is often the most effective next test.
