Most disappointing home espressos come from a short list of repeatable causes: the wrong grind, a dose that changes from shot to shot, uneven distribution, a cold machine, unsuitable water or dirty coffee-contact parts. Before blaming the machine, stabilise the recipe and change one variable at a time.
Weigh the dry dose and the drink in the cup, time the shot and taste it. For many domestic double baskets, 16 to 18 g of coffee producing roughly 32 to 40 g of espresso in about 25 to 35 seconds is a useful diagnostic starting point. It is not a universal standard. 1. Changing several variables at once #
If grind, dose, cup yield and tamping all change together, it is impossible to know what improved or worsened the shot. Keep the dose and target yield constant. Change the grind first when flow is clearly too fast or too slow, then taste before altering anything else.
The Specialty Coffee Association treats water, particle size, dose, temperature and contact time as connected variables. In a home kitchen, that calls for small controlled steps rather than more complexity.
2. Using the wrong grind #
Espresso requires a fine and reasonably uniform grind. Too coarse, water passes quickly and the cup may taste thin, salty or sharply sour. Too fine, flow struggles and the drink can become dry, bitter and heavy.
A blade grinder creates a broad mix of fines and boulders. A burr grinder with fine adjustment makes espresso far easier. If one click changes a shot from much too fast to almost blocked, the grinder may not offer enough resolution for an unpressurised basket. 3. Guessing the dose #
A heaped spoon is not a repeatable dose. Roasts and grind settings have different densities, and an espresso basket is built for a particular filling range.
Start close to the basket's rated capacity. Too little coffee can leave an unstable, shallow puck. Too much can bring the puck into contact with the shower screen, prevent proper locking or restrict flow. A scale reading to 0.1 g is helpful, although a dependable gram scale is enough to establish the habit.
4. Tamping a tilted or badly distributed bed #
An exact tamping-force number matters less than level, consistent preparation. A very hard tamp cannot compensate for a grind that is too coarse. A tilted puck or clumps encourage preferential water paths, commonly called channeling.
Distribute the grounds evenly, place the tamper level and press consistently. Avoid knocking the portafilter hard afterwards, which may create a crack at the edge. A bottomless portafilter reveals spraying, but it does not by itself identify which variable caused it.
5. Skipping a proper warm-up #
A ready light does not guarantee that the group, portafilter and cup are thermally stable on every machine. Leave the portafilter installed while the machine warms. Run a brief water-only flush if the manual permits it, and preheat the cup so that a small drink does not cool immediately.
The Istituto Espresso Italiano specifies water around 88 °C and 9 bar within its tightly defined certified espresso profile. Those figures are not a universal recipe for every modern coffee and domestic machine. Follow the appliance instructions, then change an available temperature setting only after tasting consistently prepared shots.
6. Treating advertised pump pressure as cup quality #
A 15-bar claim often describes maximum pump capability, not the pressure applied through the coffee puck during brewing. A large number guarantees neither uniform flow nor good flavour.
A dirty basket, poor distribution or unsuitable grind can produce a weak cup despite an impressive gauge. Judge flavour, flow and repeatability together. A pressure gauge is a diagnostic tool, not a quality badge.
7. Forgetting the water #
Water forms almost the whole drink and passes through the entire machine. Very hard water promotes scale. Extremely low-mineral water can taste flat or fall outside the appliance's requirements.
Use fresh drinking water with a neutral taste, do not leave it in the tank for days, and install only compatible cartridges. Set water hardness and filter mode correctly. 8. Cleaning only after the coffee tastes bad #
Coffee particles and oils collect on the basket, portafilter, shower screen and gasket. After a session, rinse the parts approved for rinsing and remove visible residue. Use the interval and product stated in the manual for deeper cleaning.

9. Cleaning milk and the steam wand too late #
Milk dries quickly on a hot wand. It can block small holes, create odours and disturb the steam pattern. Use cold milk and a clean pitcher. Purge or rinse the wand exactly as instructed, wipe it immediately with a clean damp cloth and dismantle only the intended components.
Return milk to refrigeration promptly and never pour heated leftovers back into the original container. The CDC's food-safety principles emphasise chilling and keeping hands, surfaces and utensils clean.
10. Treating crema as proof of quality #
Crema depends on factors including freshness, remaining carbon dioxide, roast, robusta content, basket and pressure. Thick crema can sit on a bitter espresso. A thin layer can accompany a balanced cup.
Stir or taste the complete drink. Look for pleasant rather than aggressive acidity, controlled bitterness, suitable body and a clean finish. Appearance is useful information, but not the final verdict.
11. Using stale or poorly stored beans #
Ground coffee loses aroma especially quickly. Whole beans retain it longer but still react to air, moisture, heat and light. Keep a sensible reserve sealed, dry, dark and away from heat. Grind immediately before brewing where possible. A fridge is usually awkward for a bag opened every day because moisture, odours and temperature swings become additional risks.
